Conclusion: Der Wunsch, den zu beeindrucken, ist unverkennbar: Stefan Fäth klotzt, was Technik und Optik angeht. Da wird kein Aufwand gescheut. Alle Gerichte sind die Kombination der Aromen geprägt – und in den meisten Fällen wirkt das auch sehr stimmig. Ich bin aber der Meinung, dass an der ein oder anderen Stelle etwas weniger mehr wäre. Etwas mehr Purismus an der richtigen Stelle, so denke ich mir, ließe die aromatischen Grundstrukturen noch komplexer erscheinen. Das Jellyfish schwimmt aber weiter – aus meiner Sicht – im sicheren Sternegewässer.
