Conclusion: "Die Küche trägt die Handschrift von Martin Bersategui. Seine Signature Dishes schmecken genauso wie in Lasarte. Seine Handschrift sind eingänge Harmonien und ein Texturenspiel, das viel mit Cremigkeit arbeitet. Dies passt an einen nordspanischen Ort anders, als ins mediterrane Spanien. Daher übernimmt Küchenchef Alex Garés zwar die aromatische Präzision und die cremigen Texturen, präsentiert diese aber viel leichter und in einer mediterranen Aromenwelt. Das gibt den Gerichten oft mehr Transparenz und mehr Spiel. Dadurch vermindert sich etwas die aromatische Generosität der originalen Berasategui-Küche. Aus meiner Sicht hat das Lasarte seine drei Sterne voll verdienst. Beide Restaurants gehören für mich zum besten, was ich bislang in Spanien kennenlernen durfte. Sie repräsentieren allerdings in gewisser Weise eine Küche, die zwar ihre Herkunft bei der Wahl der Produkte zu erkennen gibt, aber in ihrer Handwerklichkeit und Aromenkonstruktion eher international wirkt."
