Aschau: Residence Heinz Winkler

Reaktion Ein Stern

Star comeback for the Heinz Winkler residence

There is great joy at the Residenz Heinz Winkler. The gourmet restaurant has now been without a star for a year, following the death of chef legend Heinz Winkler in October 2022. The team has reorganised itself and is motivated and committed to the future under new management.

Stefan Barnhusen and Daniel Pape have taken on this task together as head chefs. Barnhusen has already cooked up stars in his position as head chef for the Jellyfish and Mountain Hub Gourmet restaurants. "I am delighted that we have managed to put the Residenz back on the culinary map with the team."

Pape was working as Chef de Cuisine at the Da Vinci restaurant when the star was awarded. "Even though I didn't prioritise the appointment, I'm still very happy that we're going further with a star. The biggest incentive, however, is the joy of cooking and the wonderful experience we can give our guests."

On the evening of 26 March, when it was time for the Michelin star award ceremony to start in Hamburg, all the staff at the Residenz and the Winkler family sat together in front of the screen and cheered along with the two chefs who had been invited to Hamburg. The cheers were huge and the relief and joy was evident on everyone's faces. It was a challenging time and many extraordinary demands had to be mastered over the past few months, in addition to striving for the best kitchen performance and professional hospitality. Alexander Winkler, Heinz Winkler's son and Managing Director since February, summarises: "The team has worked so hard and has borne all the uncertainties. It's great that our perseverance has now been recognised with this official award. Even though our biggest thank you is the satisfaction of our guests, a star is good in many ways." But this is just the beginning. The residence still has all kinds of plans on the agenda, which will be implemented step by step. And so it remains exciting on the Kirchberg in Aschau. The constant focus on the well-being of the guest and the pursuit of culinary excellence remains a constant. As always, framed by the unique location with a view of the Kampenwand and the surrounding mountains, not far from Lake Chiemsee between Munich and Salzburg.
