Sra Bua by Juan Amador opens

The new gourmet restaurant in the Kempinski Hotel Gravenbruch

FRANFKURT. He has three Michelin stars and has just opened the new restaurant Sra Bua in the Kempinski and Juan Amador is responsible for the culinary concept reigning there. The chef is thirty-one year old Dennis Maier. He can look back on eight years' of experience working in top gourmet kitchens, including a year with Juan Amador himself.

"With Sra Bua by Juan Amador we offer gourmets a new restaurant which is quite unique here in the region", said hotel director Stefan Schwind. At the moment the concept for the restaurant is being put into practice by Kempinski in five hotels, including the Adlon Kempinski in Berlin where Tim Raue is responsible for it being carried out.

This gourmet concept sees a combining of the manifold flavours of Asia with the individual culinary handwriting of a European top chef. "I am very much looking forward to surprising and delighting my guests with a special interpretation of Asian cuisine", said Amador at the opening. For example the starter might be a marinated and caramelised langoustine with wasabi ice cream and a relish made from a Granny Smith, cucumber and mustard seeds or goose liver with roasted cuttlefish, mirin gel and pickled green peaches. Amongst the main courses can be found an Ora King salmon accompanied by lukewarm cucumber, creamed rice and seaweed salad. The menu also shows an ox cheek curry served with a salad of green papayas and mangos along with Thai flavoured rice - and can be ordered for two or more guests.
