Conclusion: Eine klare konzeptionelle Fokussierung und eine gewisse Reduktion machten den Reiz der Gänge aus, die allesamt geschmacklich intensiv und keineswegs so freudlos wirkten, wie manche skandinavische Übersetzung der kleinen kulinarischen Grundgedanken.
