"Because the experience here is very different from other Michelin-starred restaurants. The enormous volume, the cramped conditions, the impersonal service and a wine pairing in which 3 out of 7 wines were absolutely irrelevant mean that a visit here does not feel like the special experience that one associates with a visit to a starred restaurant. It is much more of a lively bistro with upmarket cuisine, which does not necessarily require the star. In general, one must also ask whether this difference between expectation and reality can be held against the restaurant. After all, you can hardly accuse Bidlabu of having received a star here. I would much rather have liked the Michelin Guide to send the plaque to l'Ecume in Frankfurt or the Genusswerkstatt in Mainz. The overall package there was more in line with the expectations that come with a star." (Published in April 2024)
