Santamaria initially worked in a factory, in the automotive industry, and at a refinery; he also studied industrial design. As a self-taught chef, he began cooking at the age of 24. In 1994, he became the first Catalan to have his restaurant awarded three stars in the Michelin Guide, and the second Spanish chef ever to do so, following Juan Mari Arzak.
