Chef de Cuisine
Thomas Gerber

The Landromantik Hotel Oswald is a typical family business. The entire Oswald family helps out. That's what makes it so charming and successful.

In Kaikenried, a village in the Bavarian Forest, in the middle of nowhere (or so you might think), newly minted two-star chef Thomas Gerber and his team cook at Oswald's Gourmetstube.

Here in the ‘Woid’, as the locals say, you can really enjoy yourself. From a tourist point of view, the area is catching up significantly with Upper Bavaria in terms of its ‘somewhat reserved nature’. Wellness, spa, swimming pool, outdoor pool – everything your wellness heart desires can be found in and around the Landromantik Hotel Oswald. It is a family-run business where everyone helps to make their guests' stay an unforgettable experience. The hotel, with 60 spacious rooms and suites furnished to a high standard, offers guests rest and relaxation with various wellness packages and delicious food – the perfect place to recharge your batteries, unwind and let yourself be pampered.

Thomas Gerber, born in Cottbus in 1975, trained in Tübingen at Lorenz Adlon, cooked for Christian Bau at Schloss Berg and spent six years with Heinz Winkler in Aschau. He speaks respectfully of his former bosses. When asked about his motivations for pursuing a career in cooking, he says only one thing: ‘I always wanted to cook.’ That is his life's mantra: cooking! He doesn't pontificate about philosophies and theories. Just cooking! And how he can cook! His extraordinary culinary skills remained largely under the radar for a long time, but the second Michelin star has changed a lot. More bookings, more guests from outside the region, more attention. But Thomas Gerber is not particularly interested in any of that. He doesn't follow trends, he does what he does best: modernised classic French cuisine combined with superb craftsmanship.

We visited Oswald's Gourmetstube in late summer and were delighted with what chef Thomas Gerber and his team created on our plates:
"After the excellent amuse-bouches, bread and butter, the menu begins with a magnificent Balfegó bluefin tuna with Asian flavours. Perfectly cooked and marinated. Then Norwegian langoustine with pumpkin ravioli and a shellfish jus to die for. Be sure to ask the waiter if you can leave the sauce pot on the table. The wild turbot with artichoke in a bouillabaisse broth is also worth mentioning. You'll want to spend the whole evening revelling in the stocks, jus, soup bases and sauces. The refreshing course before the main course is a surprise: the oxheart tomato with basil is so delicately seasoned that you can taste every ray of sunshine the tomato has absorbed.
The Limousin lamb is as tender as butter, and potato croissants and aubergine round off the dish perfectly. I don't need to say any more about the two-star lamb jus, because as already stated: he knows how to cook and make sauces. For Thomas Gerber, the quality of the product is a matter of course, which is why he doesn't want to limit himself to regional suppliers in his gourmet restaurant."

Thomas Gerber is also responsible for the hotel restaurant, which delights hotel guests every day – morning, noon and night – with fine international cuisine. Hats off to this achievement at such a high level.
The friendly sommelier and restaurant manager Michaela Skotnikova attentively serves her guests with expert wine advice and outstanding service, making every visit an unforgettable experience. She is supported by her young, attentive service team. The extensive wine list, which includes both local and international wines, has something to suit every taste. The dark but exquisite design of the restaurant is a success. The atmosphere emphasises the passion for wine and cuisine. Worth mentioning is the excellent value for money and the flexible menu design, so that even those guests who find an 8-course menu overwhelming can enjoy a delightful evening.
