Conclusion: Das „Hisop“ bietet sicherlich keine experimentelle Avantgarde-Küche, wie man es vielleicht am ehesten in dieser Stadt erwarten würde. Statt dessen liefert Oriol Ivern eine leicht zugängliche Küche, die ganz auf harmonischen Geschmack setzt. Die Zubereitungen sind handwerklich akkurat, auf klug und überschaubar komponierte Gerichte konzentriert. Das trifft offenbar den Geschmack vieler Gäste. An diesem Dienstag Abend ist das Restaurant ausgebucht. Zum Erfolg trägt sicherlich auch die moderate, fast schon günstige Preisgestaltung bei, die sich auch auf der mehr als gästefreundlich bepreisten Weinkarte fortsetzt. Der Service ist professionell und gut auf das zahlreiche internationale Publikum eingestellt. Allzu ausgiebige Small Talks sollte man aber, vor allem bei Hochbetrieb, nicht erwarten.
