Schwarzwaldstube, Baiersbronn (Germany) 5

Thanks to head chef Torsten Michel, the Schwarzwaldstube restaurant in Baiersbronn is the ultimate in fine French cuisine with German accents for many guests. In 2017, Michel took over from legendary chef Harald Wohlfahrt and, under his leadership, the restaurant has maintained its top gastronomic position in all the major guides. The Schwarzwaldstube is a total work of art and is supported by an excellently coordinated team of staff. First and foremost is the highly acclaimed sommelier Stéphane Gass, who has been working at the restaurant for 20 years. His wine recommendations are perfectly matched to Torsten Michel's dishes. In addition to the large selection of individual dishes by today's standards, there are also three menus. The small and the large tasting menu with five and seven courses as well as a vegetarian menu. The Schwarzwaldstube is a member of the restaurant association Les Grandes Tables du Monde. At the beginning of 2020, the main building of Traube Tonbach, where the Schwarzwaldstube was located, burned down. Since April 2022, the Schwarzwaldstube has been rebuilt with a new design in its old location.

Consistency and coherence also characterize the materials and colors of the interior, creating an extremely relaxed atmosphere. The corresponding wine recommendations perfectly accompany the dishes (including vegetarian options) and menus at Ophelia.

Gourmetrestaurant Dichter, Rottach-Egern (Germany) 5

The seemingly ordinary can hold surprises – that is the credo of Michelin-starred chef Thomas Kellermann at the Parkhotel Egerner Höfe. Born in Upper Bavaria, he describes himself as a modern traditionalist and, together with his team, celebrates regionally inspired cuisine at the highest level. His focus is on traditional, often conventional foods of the highest quality sourced from the surrounding area. He skillfully showcases them with a modern interpretation, clear flavors, and textures, creating a wow effect on the plate. The new gourmet restaurant Dichter at the Parkhotel Egerner Höfe provides the perfect setting for Thomas Kellermann's creations. Large windows offer a view of the surrounding mountains of the Tegernsee Valley. Gourmet Restaurant PUR, Berchtesgaden (Germany) 4

The location has a long history and has long been controversial as a place for luxury gastronomy. What do you do with an area like Obersalzberg, which on the one hand is a beautiful Alpine landscape, but on the other hand, due to its history as Adolf Hitler's vacation home, implies a terrible past? After the war, the site served as a recreation center for the American armed forces. After it was handed over to the Free State of Bavaria in 1996, the Obersalzberg Nazi Documentation Center was established in 1999 and the hotel complex was built. This has succeeded in restoring the dream setting to a peaceful era that is both livable and informative. Ulrich Heimann creates classic French cuisine, which he prepares or supplements with regional ingredients such as fish, meat, and dairy products wherever possible. An extensive wine list offers the perfect accompaniment to every course.
