(30 November 2025) - Madrid restaurant El Invernadero has once again been named the best vegetable restaurant in the world in 2025 by the We're Smart Green Guide. Chantelle Nicholson from Apricity in London is Chef of the Year,

Chantelle Nicholson is committed to seasonality and sustainability and promotes purely plant-based cuisine in her restaurants and her cookbook "Planted". Born in New Zealand and originally a lawyer, she is committed to a more sustainable and holistic future in all her business areas and activities. In 2022, she opened the Apricity restaurant in London's Mayfair district with the clear aim of operating as sustainably as possible. The interior design consists largely of recycled items. The majority of the dishes are purely plant-based, with meat and seafood coming from sustainable sources. The goods are also delivered in recyclable packaging to create a closed cycle.

New Green Guide

The online guide offers culinary reviews of around 1,300 restaurants in 51 countries worldwide. Depending on the creative and sustainable use of fruit and vegetables in their dishes, the restaurants are awarded one to five radishes. The Five Radishes restaurants are recognised as true pioneers and sources of inspiration in the field of plant-based gastronomy. Every year, We're Smart publishes a new Green Guide featuring the best vegetable restaurants in the world.
