The Danske Spiseguide

The Danske Spiseguide is one of the most traditional and renowned restaurant guides in Scandinavia. Since it was founded in 1978 by the Danish food critic Bent Christensen, the guide has pursued the goal of identifying the country's best culinary addresses and making them accessible to a wide audience. The focus is not only on haute cuisine, but also on regional specialities, innovative kitchen concepts and outstanding overall gastronomic achievements.

The 300 or so restaurants listed are selected on the basis of personal visits and detailed reviews. The criteria include the quality of the food, the precision of the craftsmanship, the creativity of the cuisine, the wine expertise, the service and the ambience. The independence and expertise of the editorial team, which is characterised by decades of experience and a deep understanding of gastronomic developments, is particularly valued.

Every year, the guide presents awards in various categories - including "Restaurant of the Year", "Green Cuisine of the Year" and "Teamwork of the Year" - and thus recognises special achievements within the Danish gastronomy scene. Inclusion in the Danske Spiseguide is regarded as a seal of quality and is a significant milestone for many establishments.

With its mixture of critical expertise and passionate culinary enthusiasm, the Danske Sp iseguide has established itself as a firm authority - for gourmets and industry professionals alike.

The rating system

  • Knife & Fork: An interesting cuisine with a good price-performance ratio
  • One star: Awarded to restaurants that serve food and drink at a level that is above the Danish average for their category.
  • Two stars: Awarded to restaurants that offer a seasonal, sophisticated and exciting dining experience with personalised and knowledgeable service and good drinks advice.
  • Three stars: Awarded to restaurants that consistently ensure that menus, service and wine and beverage selection meet the highest Danish standards.
  • Sun (SOL): Awarded to restaurants that are characterised by special achievements, with a focus on being included in the EEE category. To be considered, all parameters of the restaurant experience must be prioritised: The food, innovation and flavour, the menus (the common thread), wine and beverage selection, choice, theme and service, general guest service, atmosphere, table comfort, cutlery/glasses etc., temperature, lighting conditions, acoustics, music, ambience.
  • Europe Exclusive Elite (EEE): Only very few restaurants are listed here. The criterion is that the selected restaurants are directly comparable to European ***Michelin restaurants in terms of quality/execution/service. Classifications, wine The guide classifies and prioritises personally matched wine ranges that offer breadth, depth and variety.
  • World Class (GLOBE): The superior level where ambition, creativity, pleasure and well-being form a seamless experience that few restaurants in the world are blessed with.
  • In addition, wine lists are rated with one to three glasses. An "Icon" symbol is awarded to particularly deserving personalities in Danish gastronomy.
