About the 360° Eat Guide

The 360°Eat Guide is the first restaurant guide to take sustainability into account alongside the culinary experience. Sustainability is rated with rings:

  • A circle signals great commitment in some or more areas of sustainability - environmental, social and economic. The knowledge and ambitions are more pronounced than in an average restaurant.
  • Two circles: A rating with two circles indicates commitment and ambition in several areas of sustainability - environmental, social and economic. The sustainability efforts are serious and long-term. The ambitions are communicated both internally to employees and externally to guests and suppliers.
  • Three circles: A rating with three circles indicates competence in all areas of sustainability - environmental, social and economic. Sustainability efforts characterise all aspects of the restaurant - locality, seasonality, food waste, recycling, relationships with farmers, economics, policies, and employee development and well-being - in a thoughtful, authentic and completely natural way.
  • In addition, a score on a scale of 0 to 100 is awarded for the gastronomic level. The points take into account presentation, flavour, texture, savoir-faire, composition, seasonality - as well as service, knowledge and ambience.

According to the guide, the ratings are based on visits by members of the jury and detailed discussions with the restaurant operators. However, a variety of factors, including procurement practices, supplier relationships, staff management, work-life balance, waste reduction and energy efficiency, are taken into account in order to assess restaurants in terms of their economic, environmental and social commitment.
