Paul Stradner opens a restaurant in Germany

France, Baden-Württemberg

The head chef of the two-star restaurant Villa Lalique is setting up his own business at the 1839 Malerhaus in Achern

ACHERN. Two-Michelin-star chef Paul Stradner is returning to Germany. In the first quarter of 2027, he will be treating his guests at the 1839 Malerhaus in Achern. At the same time, he will continue to serve as head chef at the two-star restaurant at Villa René Lalique in Alsace. This marks the first time Paul Stradner has opened his own restaurant. The historic residential and craftsmen’s house in Achern town centre is one of the oldest buildings in the town. It has been extensively restored and converted for use as a restaurant. The premises also include an idyllic garden with al fresco dining. His aim is to lead the restaurant into the ‘world of stars’ as soon as possible. There are also plans for a collaboration with the Maison Talmühle Boutique Resort & Spa in the Black Forest. Preparations for the opening in the first quarter of 2027 are in full swing.

A region of culinary delights with a penchant for fine wines

Achern lies in the Achertal valley, nestled within the wine-growing and culinary landscape of the Ortenau region. The region, renowned for Riesling and Pinot Noir, combines viticulture, orchards and a rich tradition of distilling with its proximity to the Black Forest and Alsace. Paul Stradner knows the region inside out, having lived with his family in neighbouring Bühl for many years. He is also familiar with the Ortenau from his time as head chef at the Brenners Park-Hotel & Spa in Baden-Baden. There, from 2012 to 2017, he ran the kitchen of the fine-dining restaurant and earned two Michelin stars for the Brenners Park Restaurant.

“I have had close ties with the region for many years, both professionally and personally. In the 1839 Malerhaus in Achern, I have found a special and historic venue where I can bring my vision of cuisine and hospitality to life,” says Paul Stradner. Paul Stradner is particularly delighted that a long-standing colleague is by his side in this new challenge, providing a strong foundation for the future: at the 1839 Malerhaus in Achern, Swiss chef Julian Schmid will serve as Executive Chef, sharing responsibility for the culinary direction of the restaurant alongside Paul Stradner.

Continued culinary responsibility in France

“Alongside his role at the 1839 Malerhaus in Germany, Paul Stradner continues his work at the Villa René Lalique in Wingen-sur-Moder, Alsace. He has been working there since 2017 and, as head chef since 2020, has been in charge of the kitchen at the restaurant and boutique hotel. He shapes the establishment’s culinary identity together with a well-established team that has been working with him for years.

Paul Stradner has been head chef at the Villa René Lalique restaurant since 2020. The Austrian completed a dual apprenticeship as a chef and restaurant manager and worked for seven years at the Schwarzwaldstube at the Traube Tonbach in Baiersbronn. He then worked alongside Jean-Georges Klein at the three-Michelin-starred restaurant L’Arnsbourg in Baerenthal. From 2012 to 2017, as head chef at the Brenners Park-Restaurant in Baden-Baden, he led the restaurant to two Michelin stars. In 2017, he moved to Villa René Lalique, which was awarded the Prix Villégiature the following year as the best hotel restaurant in Europe. The restaurant currently holds two Michelin stars.
