Restaurant review

Marie, Hanover

Hannover, Niedersachsen, Forum

“Sven Holthaus and his team bring a touch of colour to Hannover’s culinary scene that is not replicated in this way by the other excellent restaurants.”

Our forum member Thomashaj says: “Sven Holthaus and his team bring a touch of colour to Hannover’s culinary scene that is not covered in this way by the other excellent restaurants. His cuisine is neither avant-garde nor minimalist, but rather based on classic French cooking. Here and there, Asian flavours lend the dishes a modern twist, as do the elaborate variations on individual ingredients, such as the butter turnip or butternut squash. The craftsmanship is impeccable, the compositions harmonious, and no detail is spared, although I sometimes get the impression that they’re trying to show and fit almost too much onto every plate, and a little simplification would do one or two courses good. The Michelin star is certainly well deserved, however. The food is good, the service is competent, but it doesn’t quite spark. Let’s take it as a subjective snapshot. And that could turn out quite differently with the next menu.” (Published in May 2026)
