Bruno Verjus is closing his restaurant
PARIS. Bruno Verjus has announced that he is closing his restaurant, Table. In a video posted on Instagram, he explained that it will remain open until 22 December. He then intends to embark on a new chapter in fine dining. The restaurant holds two Michelin stars. The restaurant has also featured in ‘The World’s 50 Best’ rankings for the past four years, spending the last three of those in the top 10.
In the video, Verjus declares fine dining to be “dead”. “I no longer feel comfortable excluding people. After all, the whole idea of fine dining is to let people discover wonderful food with wonderful service. But over time, I increasingly felt I was doing things that belonged to the past. We need to move forward in a different way. I want to feed people, but not just a very small group of people. I want to feed as many people as possible – using my knowledge, the fantastic ingredients we can source, and the amazing skills of my entire team. But in a completely different way.”
Since the opening of the restaurant Table in April 2013, Bruno Verjus has established himself on the Parisian gastronomic scene with a produce-focused approach and a very direct relationship with producers. The set menu at Table currently costs 480 euros. The self-taught chef, former entrepreneur, journalist and food blogger opened his restaurant at the age of 54 after a varied career. In his announcement, he left open exactly how he intends to realise his vision for gastronomy in the future.
