Michelin’s debut in the south-west of the USA
The Michelin Guide rates 64 restaurants in Nevada, Arizona, New Mexico and Utah
(31 August 2026) – Michelin has published its first edition covering the south-west of the USA. This means that, for the first time since 2009, there are once again starred restaurants in Las Vegas.
The Restaurant de Joël Robuchon in Las Vegas is the only restaurant in this edition to receive two stars. Four restaurants have been awarded one star: é by José Andrés in Las Vegas, Guy Savoy Las Vegas, L’Atelier de Joël Robuchon Las Vegas and Monte in South Salt Lake, Utah. This year, four Special Awards were also presented to recognise the exceptional passion and expertise of selected professionals. The full selection, including Bib Gourmand and recommended restaurants, comprises a total of 64 establishments representing 24 different culinary traditions.
“As we celebrated our memorable return to Las Vegas and the wider South-West region this evening, we were able to honour the dedication and passion of the outstanding gastronomic scene across these four states,” said Gwendal Poullennec, International Director of the Michelin Guide. “From world-famous restaurants to hidden culinary gems, the Southwest offers an impressive variety of exceptional establishments, as this first selection demonstrates. Throughout their travels, our anonymous inspectors were repeatedly impressed by the authenticity, creativity and local flair. Congratulations to all the award winners!”
Two stars
- Restaurant de Joël Robuchon (Las Vegas, NV; contemporary French cuisine): Escape the hustle and bustle of the casinos and enjoy a first-class culinary experience in this sumptuous oasis on the ground floor of the MGM Grand. The opulent dining room, reminiscent of an intimate Art Deco-style salon, is carpeted in fine fabric and decorated with regal aubergine-coloured velvet, golden accents and sparkling crystal. Dinner here is an event in itself: you’ll be taken on a journey through a series of courses characterised by modern French cuisine and international influences. The meal begins with a selection of home-baked bread, and is rounded off with a feast of mignardises. Look forward to creations such as shellfish jelly with crab meat and caviar, crispy daikon with dashi, and pan-fried game with pears poached in red wine. The menu is complemented by an extensive and impressive wine list.
One star
- Guy Savoy Las Vegas (Las Vegas, NV; modern French cuisine): In a quiet corner on the second floor of the Augustus Tower at Caesar’s Palace, guests are welcomed into an exclusive world of elegance and luxury. Enjoy the attentive service and let your gaze wander over the city lights, or watch the magnificent procession of trolleys laden with champagne, bread, cheese and desserts. The cuisine captivates with its classic French sophistication and can be enjoyed à la carte or as a tasting menu. In both cases, the house specialities, such as the exquisite truffle and artichoke soup with roasted mushroom brioche, are the absolute highlight. The truly impressive wine list, as extensive as a medieval manuscript and presented on its own side table, offers both legendary wines and surprising discoveries.
- é by José Andrés (Las Vegas, NV; Spanish contemporary): Tucked away in a surreal-looking room at Jaleo on the third floor of the Cosmopolitan, this private bar offers a glimpse into the imagination of head chef José Andrés and his team. The sophisticated multi-course menu presents a series of beautifully plated dishes imbued with playfulness and drama. A touch of theatrics is ever-present, complemented by attentive service and the dynamic kitchen team – you’re guaranteed never to get bored here. Among the ingeniously crafted canapés are, for example, a ‘PB&J’ made from feather-light meringue ‘bread’ filled with foie gras mousse, pine nut butter and blueberry jam, or a course that reflects the flavours of Spanish vermouth: a Santa Barbara prawn with salty olive balls and mandarin snow. The ingenuity continues right to the end, with a wealth of playful desserts.
- L’Atelier de Joël Robuchon Las Vegas ( Las Vegas, NV; French cuisine): Globetrotters and gourmets are already familiar with this extraordinary concept. The iconic red-and-black design, dominated by the bar, is a familiar sight, particularly as this Las Vegas restaurant has been in existence since 2005 (it is located on the ground floor of the MGM Grand). As well as modern French cuisine, the restaurant also offers à la carte dishes, but the best way to experience its distinctive cuisine is the ‘Menu Découverte’. In the hands of this team, the humble potato is transformed into a luxurious salad with black truffle dressing; a succulent scallop is seared on the plancha and served with a coconut and citrus foam; and a beautifully roasted quail is served with the late head chef’s world-famous mashed potatoes.
- Monte (South Salt Lake, UT; American, contemporary cuisine): This ambitious restaurant, located within the Beehive Distillery in South Salt Lake, is blazing its own trail in the region. Towers of gin barrels, concrete floors and a few tables spaced far apart form the backdrop against which head chef Martín Babio draws on decades of experience to create a refined tasting menu featuring produce from local growers. French, Italian and South American influences are woven into the carefully presented and boldly spiced dishes. Highlights from recent years include a variation on French onion soup, coffee-marinated game with truffle mash, and rabbit ravioli with ginger and lemongrass. The chef’s wife, Karen, ensures everything runs smoothly, leading a professional and attentive service team.
