The Maerz brothers take over the Hotel Eberhards am Wasser
BIETIGHEIM-BISSINGEN. Top chef Benjamin Maerz and sommelier Christian Maerz are the new owners of the Eberhards am Wasser in Bietigheim-Bissingen. The restaurant is set to reopen on 23 September.
Since the restaurant’s temporary closure at the end of April 2026, only the busy hotel business at Eberhards has continued, operating as a bed-and-breakfast. A well-known Bietigheim-based family of restaurateurs has now been found to take over as the new tenants of the Hotel Eberhards. Consequently, the Maerz brothers from the one-star restaurant MAERZ will take over the full lease from 9 September 2026 and resume the restaurant’s usual high-quality service on 23 September 2026. The current managing director, Bastian Fischer – grandson of the founder, Eberhard Bezner – is stepping down completely from the day-to-day management of the hotel and restaurant operations to focus on new professional endeavours. Commenting on this decision, he said: “In the Maerz brothers and their family, we have secured highly experienced professionals who will drive an innovative ‘Restaurant 3.0’ concept and the further development of the modern hotel segment at the Eberhard. We are therefore looking forward to the professional continuation of the business.”
The Maerz family have been running the long-established ROSE restaurant at 14 Kronenbergstraße in Bietigheim since 1989 as experienced and highly regarded restaurateurs. The existing lease agreement expires automatically at the end of the year and has not been renewed by mutual agreement. Benjamin Maerz explains the situation: “It was a fundamental decision for us to strike out in a new entrepreneurial direction right now, given the lease situation. This fits in perfectly with my brother’s and my future life plans. Through the Eberhards, we remain connected to our home town of Bietigheim and can implement new and exciting catering concepts. We would like to thank the Gläser family for their collaboration to date and are very much looking forward to this new chapter, in which we aim to set new standards for regional catering once again.”
Until the end of the year, Eberhards will host a “Maerz Pop-Up am Wasser”, featuring a mix of modern and urban dishes, a surprise menu, as well as small snacks and light bites. The popular MAERZ BURGER will also be moving to Eberhards. A brand-new concept, with a new name and new interior design, will be launched in the new year. “We want to take a little more time for the redesign and also gain some initial experience during the pop-up phase. We’re delighted that, in our new premises, we’ll be able to set new trends freely and creatively and turn a new page. We’re highly motivated to remain the city’s culinary beacon,” add the Maerzens.
Restaurant operations at the Rose will gradually come to an end due to the lease expiring and the resulting clearance and renovation work. An exact date has not yet been set. The steadily growing sales of the meal kits will continue to be handled at the Rose until the end of the year and will then also move to the new premises in the new year. In future, the experienced hotelier Christian Maerz will be responsible for running the hotel and will professionally manage the existing 19 guest rooms at the Haus an der Enz.
