Forum member MacClaus writes: “Hakuba, which means ‘white horse’ in Japanese, is the result of a collaboration between the renowned Japanese sushi chef Takuya Watanabe and head chef Arnaud Donckele and pastry chef Maxime Frédéric from the Plénitude restaurant. The restaurant, which opened in March 2024 at the Hotel Cheval Blanc, invites guests to immerse themselves in Japanese culinary culture, with omakase menus characterised by tradition, precision and authenticity. Two omakase menus are on offer: a lunch menu for €180 and the full menu for €380, which can be ordered at both lunchtime and in the evening.” (Published in March 2026)
