In September, LA VIE by Thomas Bühner will welcome Juan Amador, whose restaurant Amador in Vienna has held three Michelin stars since 2019 – the first Austrian restaurant ever to do so. Amador, born in Waiblingen in 1968 to Spanish migrant workers, has been regarded as one of the leading figures in molecular cuisine in the German-speaking world since his early days in Langen near Frankfurt, blending Catalan, French and Basque influences into a distinctive, minimalist style. Bühner and Amador share a long-standing friendship – but Timo Fritsche and Amador also have a shared history: Fritsche worked as head pastry chef at Restaurant Amador in 2010. Now the two are set to meet again on 7 September to cook a seven-course menu together, blending the distinctive styles of both kitchens into a shared evening. From Amador’s kitchen, guests can look forward to, amongst other things, an iced beurre blanc, his ‘Kaiserschmarrn’ made with langoustines, salted apricots and chorizo, and the Miéral pigeon cooked over charcoal.
