Although we only experienced his cuisine there once, even then we were very impressed by the highly elegant dishes, which are clearly rooted in the French tradition yet have a distinctly contemporary feel. His plating is visually stunning, without this being an end in itself. The creations are well thought out and designed to create harmonious flavour profiles. They eschew anything that might be jarring – something guests in this refined setting would presumably neither expect nor appreciate.
