Two new three-star restaurants in California
The Michelin Guide rates 521 restaurants in California
(26 June 2026) – The Michelin Guide has announced its selection of restaurants in San Diego for the 2026 edition covering California. The event was buzzing with excitement, with both‘Californios’in San Francisco and‘Enclos’in Sonoma being awarded three stars. The applause continued as‘Kato’in Los Angeles was elevated to two stars. In addition, as part of this year’s selection, nine outstanding restaurants across the state were awarded one star. The full selection – including ‘Bib Gourmand’ establishments and recommended restaurants – comprises 521 venues representing 54 different culinary styles.
“As one of our most established destinations in the US, California has set the benchmark for exceptional culinary experiences that are well worth the journey,” said Gwendal Poullennec, International Director of the Michelin Guide. “This year is no exception: thanks to the fantastic discoveries made by our inspectors, California remains a pioneer in the industry. Congratulations to the newest members of the star family – including two new three-star restaurants: ‘Californios’ and ‘Enclos’.”
Three stars
- Californios ( San Francisco; Mexican cuisine): By combining a passion for Mexico’s rich cultural heritage, boundless imagination and masterful technique, head chef Val M. Cantú has created a truly unique gastronomic destination. The menu draws on an impressive array of Mexican flavours and utilises top-quality produce, as well as subtle international influences, to transform familiar dishes into delicious, distinctive culinary creations. The humble tortilla is showcased here with particular mastery – for example, as a light sourdough tortilla served with a wonderfully crispy black cod fried in mezcal batter, enriched with huitlacoche and yellow maize creams, or as a white heirloom maize tortilla with black sesame and poppy seeds, served with smoked quail in a complex, homemade mole.
- Enclos (Sonoma; contemporary cuisine): This bespoke retreat by head chef Brian Limoge exudes cosy sophistication and is a respectful reimagining of a late 19th-century Victorian building in the centre of Sonoma. The tasting menu combines global flavours, sophisticated technique and top-quality ingredients – including produce from the affiliated Stone Edge Farm – whilst always revealing subtle nods to the chef’s New England roots. One example of this is the signature mussel chawanmushi, which evokes the spirit of a classic chowder. The team demonstrates masterful skill at the grill; the accompanying sauces surprise and delight, such as with the succulent quail roasted over an open fire, refined with artichokes, pickled rose petals and charred citrus pulp. The crowning glory is an unforgettable, seasonally inspired composition, perhaps centred around freshly picked wild strawberries.
Two stars
Kato ( Los Angeles; Asian cuisine): Head chef Jonathan Yao has found a superb stage in this cool, exposed-concrete enclave within ‘Row DTLA’. Here, he and his team have devoted themselves to developing an inspired tasting menu that skilfully combines elements of his Taiwanese heritage and his youth spent in Los Angeles, whilst striking a balance between boldness and sophistication. Gently cooked Mt. Lassen trout is bathed in a vibrant, complex fish stock, given a tingling heat by fermented Napa cabbage; This is paired with a Peking duck breast with crispy skin, accompanied by a sesame ball filled with succulent confit and a robust jus flavoured with citrusy Magao pepper – a combination that feels both comforting and familiar, yet excitingly original. The days when you could bring your own wine (BYOB) are long gone: today, the restaurant impresses with an impressive wine list, tempting cocktails and exceptional non-alcoholic creations.
One star
- Corridor 109 (Los Angeles; contemporary Asian cuisine) Good things often come in small packages – this is particularly true of Corridor 109, an intimate restaurant with just eleven seats at a counter in Melrose Hill, where reservations are essential. Head chef and owner Brian Baik honed his skills in New York before returning to Los Angeles. Corridor 109, tucked away behind a door in its sister venue ‘Bar 109’, specialises in fish – mainly sourced from Japan – which is often served raw. The tasting menu is a testament to great care and finesse; the well-balanced dishes captivate with their pleasing restraint. Among the unforgettable dishes are the Santa Barbara lobster tartare in a kombu tartlet with whitefish mousse, and the charcoal-grilled, miso-marinated sawfish (sawara). The meal concludes with the only dish without seafood: Australian Wagyu, served on an oxtail jus with shiso.
- KOJIMA ( Los Angeles; Japanese cuisine): KOJIMA is a real hidden gem, situated on the first floor of a retail complex in Sawtelle. This cosy eatery seats just a few guests at a counter that winds its way around the open kitchen, where head chef Hayato Kojima works his culinary magic. There is no fixed or printed menu; instead, the friendly waiting staff explain each dish with great enthusiasm. The menu changes daily and depends on the availability of top-quality, fresh ingredients; examples might include pan-fried grouper or gently poached Japanese clams served on springy sōmen noodles made from kudzu starch. The crispy grilled unagi (eel) is a delight, and the hearty finale – rice with shirasu and dried shiso, served with miso soup and pickled daikon radish – rounds off the experience perfectly. A booking is just as advisable as arriving on time, as all guests are served at the same time.
- Lielle ( Los Angeles; Californian cuisine): Some bookings feel like a victory – and securing a table at Chef Marcus Jernmark’s currently extremely trendy ‘Lielle’ is exactly that. Everyone comes here to sample his Californian cuisine; the distinctive, ingredient-led tasting menu can be complemented by dishes such as agnolotti del plin with Gruyère cream, black truffle and beurre noisette. Jernmark’s cooking style is precise and skilful, yet by no means overbearing – as seen, for example, in the aged Shima Aji crudo with chilled, grilled sugar snap peas and finely diced cucumber, or the Californian pigeon grilled over pinewood, accompanied by a crisp salad with a miso vinaigrette made from the restaurant’s own bread scraps.
- Lucien (La Jolla; Californian cuisine): Head chef Elijah Arizmendi gained his early experience in New York kitchens before returning to his home state to launch this sophisticated tasting-menu concept on the third floor of ‘La Plaza La Jolla’. Whether it’s Californian Iberico pork or locally caught fish – the region’s bounty is celebrated on a menu that blends French and Japanese influences. A menu might begin with canapés such as sweet potato deep-fried in tempura batter with caviar, or yellowfin mackerel in a crispy nori roll. ...followed by a rose meringue with beetroot and green yoghurt, before moving on to impressive dishes such as brick-baked sea bass with crispy skin, tender fennel and pomegranate, or free-range chicken stuffed with chicken mousse and truffles. The desserts are creative, such as the pineapple braised in cinnamon caramel, which has been roasted over an open fire for hours.
- Miura ( Beverly Hills; sushi): Miura marks a reinvention and a fresh start for a venue long prized as a go-to spot for outstanding sushi. Located on the upper floor of the ‘Two Rodeo Drive’ pedestrian zone, the restaurant offers a calming, peaceful space with a silky-smooth wooden counter. The spotlight is firmly on the affable, US-born head chef Derek Wilcox, who undertook extensive training in Japan and previously worked in New York City. His attention to detail and high level of sophistication are evident throughout the omakase menu, for example when he grills snow crab over charcoal or lightly smokes wild bluefin tuna over rice straw. The nigiri form the highlight of this impressive menu, with ingredients predominantly sourced from Japan – such as creamy cuttlefish from Kagoshima or garfish from Miyagi.
- Naides ( San Francisco; Filipino cuisine): Named after Chef Patrick Gabon’s mother, this little gem is unmistakably a labour of love. Drawing on the fine-dining experience of Chef Gabon and his partner Celine Wuu (who manages the service with aplomb), Naides serves an original interpretation of Filipino cuisine in the form of a stylish, modern tasting menu. By combining Californian ingredients (including wild-foraged herbs and flowers) with traditional flavours and bold creativity, the restaurant creates dishes that are as visually stunning as they are delicious. One example of this is the light and airy brioche ‘pandesal’, paired with deliciously braised chicken gizzards – a sophisticated take on the spicy, hearty sisig – whilst perfectly cooked, dry-aged duck breast (‘Adobo’) is served with a soya jus and horseradish.
- Seline ( Santa Monica; Californian cuisine): You might not expect to be served ice cream amidst a series of savoury courses, but at Seline, run by head chef Dave Beran, surprises are the hallmark of a deeply personal culinary experience. His sophisticated tasting menu is based on a well-thought-out concept and explores themes such as the changing seasons. A menu might, for example, begin with a miniature garden of edible succulents set on a ‘soil’ of caraway and rye crumbs, dusted with fine cauliflower snow. Black cod flavoured with wild bay leaves, combined with mussel cream and fennel, is a testament to classic sophistication, whilst the lamb fillet with a jus of roasted strawberries and wild herbs adds a playful touch – perfectly complemented by homemade brioche brushed with lard. The chef’s signature Osetra caviar on toasted hazelnuts and coffee crème anglaise is a true delight.
- Troubadour ( Healdsburg; French cuisine): Melissa and Sean McGaughey met and fell in love whilst working together at ‘SingleThread’ (she as a baker, he as a sous-chef); here they have combined their talents to create something unique: a charming destination in Healdsburg. This delightful little eatery is a popular sandwich shop and bakery by day (the owners also run the nearby ‘Quail and Condor’); in the evening, it transforms to offer an exciting tasting menu that showcases Californian ingredients with sophistication and technical precision. Classic foundations are brought to life with a modern twist – for example, a ‘bouillabaisse’ made from gently cooked rock bass with a saffron-yuzu emulsion and a mussel croquette, or the pan-fried duck breast with malted potato cream and a morel stuffed with chicken mousseline. Naturally, the bread course is also a highlight.
- Wolfsbane (San Francisco; contemporary cuisine): Head chef Rupert Blease and his wife Carrie, who is in charge of service, are making a comeback to fine dining with this stylish restaurant in the Dogpatch neighbourhood – a return that many have been eagerly anticipating. The opulent multi-course menu is a testament to great creative flair and showcases Blease’s distinctive interpretation of modern Californian cuisine, skilfully accented by Nordic, Japanese and French influences. Top-quality local produce is prepared with precision and enhanced by finely balanced sauces that strike a perfect balance between richness and freshness. One example of this is wonderfully fresh Dungeness crab, combined with earthy sweet potato and a buttery sauce Maltaise, which takes on a vibrant pink hue thanks to blood orange and beetroot. Pure flavours and refined textures are the restaurant’s hallmark, making every bite an unforgettable experience.
Green Star
Three new restaurants have been recognised for their inspiring vision: Monte’s ( Santa Barbara), Sierra Mar (Big Sur) and Six Test Kitchen (Paso Robles) have been awarded the ‘Green Star’ in recognition of their inspiring and committed vision for the future of gastronomy. The Green Star recognises restaurants whose approach has particularly impressed the inspectors. By creating a community of innovative establishments committed to driving the progress of gastronomy, the Green Star fosters dialogue and collaboration, and encourages restaurants to inspire and develop one another.
