Collaboration between Irori and Cølbo at the Isenhof

Moritz Techet and Jansý Frederiksberg-Techet from Cølbo in Klingenberg are coming to Knittelsheim to create a menu at Irori together with Max Goldberg and Kerstin Bauer – accompanied by selected wines and sake.
Moritz and Jansý met on the Faroe Islands when Moritz was working at Koks. After further stints at renowned establishments, they have now settled in Moritz’s home town of Klingenberg in Lower Franconia, where they have established their own restaurant, Cølbo. Much like Max Goldberg, they are forging their own path in the restaurant industry – with a conscious, thoughtful approach to resources and a clear philosophy in their kitchen.
This is precisely where the connection lies: a shared vision of cuisine that enables a bridge to be built between the two kitchens. The result is a multi-course menu that unites the signatures of both restaurants whilst leaving room for exchange and interpretation.
