Farewell
Jürgen Dollase ends his collaboration with FAS
The food and drink journalist Jürgen Dollase has ended his collaboration with the *Frankfurter Allgemeine Sonntagszeitung*. He “resigned with immediate effect”, Dollase wrote in a social media post. He had worked for 25 years as a columnist and author of numerous articles for the newspaper’s lifestyle section. At the end of the year, he and wine columnist Stephan Reinhard selected the “Favourites of the Year” in the gastronomy and wine scene.
As justification, Dollase accused the FAS of “professionally unqualified handling of my work by the editors responsible for the ‘Genuss’ page”. Furthermore, he claimed that other articles in that section of the newspaper were “often unspeakably banal”.
Dollase is regarded as a pioneer of an analytical approach to the culinary arts, which he transformed from an emotional gut reaction into a well-founded intellectual exercise through his self-developed “modern sensory analysis”. Using technical terms such as “chords”, “textures” or “flavour progression curves”, he created a unique vocabulary for assessing haute cuisine. The former Krautrock musician ( Wallenstein) authored numerous cookery books and, through his incisive columns, played a key role in elevating gastronomy in Germany to the status of a serious cultural asset.
