Change of management at Tantris
MUNICH. After six years and a strategic reorientation, the Eichbauer family is bidding farewell to Executive Chef and Culinary Director Matthias Hahn at TANTRIS MAISON CULINAIRE. Under his leadership, TANTRIS MAISON CULINAIRE was awarded a total of three Michelin stars for the fourth time – two stars for the TANTRIS restaurant and one star for TANTRIS DNA. In keeping with the tradition of the family-run establishment, Sabine Eichbauer will take over as CEO and assume overall management.
The internationally renowned top chef and former manager at Alain Ducasse, Matthias Hahn, has, together with Felix and Sabine Eichbauer as well as Benjamin Chmura, successfully shaped and spearheaded the reorientation of TANTRIS following the Hans Haas era since the summer of 2020. After six years of excellent collaboration, Sabine and Felix Eichbauer would like to express their heartfelt thanks to Matthias Hahn: “In Matthias Hahn, we had one of the most accomplished connoisseurs of international haute cuisine at our side. His experience, his eye for excellence and his passion for the craft have significantly shaped TANTRIS’s new direction. We are grateful for this outstanding collaboration and wish him all the best,” said Felix Eichbauer.
Under the leadership of Matthias Hahn, TANTRIS MAISON CULINAIRE has taken on its current form: comprising the two-Michelin-starred restaurant TANTRIS, the one-Michelin-starred restaurant TANTRIS DNA and BAR TANTRIS. In close collaboration with the Eichbauer family and Executive Chef Benjamin Chmura, one of Europe’s most traditional culinary destinations has thus been successfully positioned for the future.
Now that Benjamin Chmura, as Executive Chef, is in charge of both restaurants, a reorganisation is also taking place within the management structure of TANTRIS MAISON CULINAIRE: in keeping with the fine tradition of this family-run establishment, Sabine Eichbauer is succeeding her father-in-law Fritz Eichbauer, who passed away last year, as Managing Director and will, together with her husband Felix Eichbauer, be responsible for the overall management of the establishment in future.

With this change in leadership, TANTRIS MAISON CULINAIRE looks back not only on over five decades of success, but above all looks forward with determination and in keeping with the house’s tradition.
Professionally, Sabine Eichbauer combines architecture and hospitality. She has deep roots in architecture, among other fields. As co-founder of the Munich-based architectural firm STUDIOSOKO (Architecture & Policy), she is dedicated to the design of spaces and experiences. This creative precision formed the foundation for the comprehensive transformation of Tantris in 2021, during which she took charge of design and conceptual renewal. Under her leadership, Tantris was transformed into the “Tantris Maison Culinaire” to mark its 50th anniversary. Her focus lies on a triad of humanity, nature and technology, through which she has modernised the restaurant with an aesthetic sensibility and a deep respect for guests and staff. Sabine Eichbauer’s passion for authentic produce regularly takes her to Tuscany. Together with her husband Felix Eichbauer, she runs the biodynamic Podere Salicutti vineyard in Montalcino. As a winemaker, she is directly involved in the production of Brunello wines here, which sharpens her understanding of terroir and artisanal quality – expertise that also benefits the Tantris’s wine cellar
