Michelin-starred restaurant bi:braud is moving
ULM. This is set to be her biggest move yet: Alina Meissner-Bebrout (36) is relocating her Michelin-starred restaurant, bi:braud – from Büchsengasse, where it all began in 2014 in a former butcher’s shop, to the historic Bäumle building right next to Ulm Minster. Together with her husband Steffen Meissner, the Ulm-based Michelin-starred chef is transforming the traditional building into the Hotel Maison Meissner, a 15-room design hotel with bi:braud at its culinary heart. Opening: summer 2026. The Edda Brasserie will remain unchanged at its current location.

“I’m incredibly excited about what’s to come,” says Alina Meissner-Bebrout. “Twelve years on Büchsengasse were wonderful – but at some point we reached the limits of what was possible at that location. With the Maison Meissner, we’re finally getting the setting we’ve always wanted. With more space in the kitchen, a bar where you can pop in just for a two-course meal and a glass of wine – and a hotel that brings it all together.”
The former Hotel Bäumle, a 15th-century building, is a listed monument and is situated right next to Ulm Minster. Under the guidance of Alina and Steffen Meissner, the historic building is being transformed into a 15-room design hotel with its own distinctive character. The bibraud is moving in as a Michelin-starred restaurant and will have there what it never had in the Büchsengasse: a kitchen with breathing space, its own preparation areas – and an à la carte menu alongside the set menu.
The star must be re-earned
In Germany, Michelin stars are tied to the address, not the person. This means that bibraud must formally re-earn the star it earned in 2023 at its new address. For Alina Meissner-Bebrout, this is no drama, but familiar territory. “We’ve earned the star once, so we’ll just do it a second time,” says Meissner-Bebrout. “What defines us isn’t hanging on the walls. It depends on the team, on our attitude towards the produce, on what we put on the plate. And we’re taking all of that with us.”
The new à la carte concept also opens up new culinary horizons. There will be bar food – including a bibraud favourite: French toast with tartare as an amuse-bouche. The menu features classics from twelve years of bibraud alongside dishes that Alina Meissner-Bebrout is currently developing especially for the venue. And: the Bäumle will also have its place on the plate.
“We have so many dishes that our guests have grown to love over the years – and a few classics simply have to come along. But we’re also delving into the history of the establishment. In the old Bäumle, there were dishes that have been completely forgotten. We’re reviving some of them – with our own twist.” Those familiar with the bibraud will find something familiar – those visiting for the first time will get to know it at the bar in small bites.
À la carte for the first time
One of the biggest changes: alongside the set menu concept, the new bibraud will also offer an à la carte menu for the first time. Maison Meissner will thus become a venue suitable for a wide range of occasions – from a quick stop at the bar to a full-course meal.
“What appeals to us so much about Maison Meissner is the variety that is possible in this establishment,” says Meissner-Bebrout. “You can pop in for an aperitif, sit down for a two-course à la carte meal, enjoy the full menu with wine pairings – or stay overnight right here in the hotel. All under one roof. This is exactly the place we’ve always wanted.”
The dual leadership in the kitchen, established in September 2025, remains in place: Alina Meissner-Bebrout and Tim Ostertag (30) will continue to run bibraud together at Maison Meissner. Sommelier and wine academic Holger Baier is in charge of the new wine cellar. The entire service team is moving to the new location.
Whilst bibraud is relocating, the Edda Brasserie will remain unchanged at its current location. Both establishments will continue to stand for the same product quality, albeit with a different tone: the Brasserie as an accessible concept for a relaxed evening, and bibraud as a venue for special occasions – now nestled within Maison Meissner.
The Hotel Maison Meissner and the new bibraud are set to open in summer 2026. The Michelin star awards ceremony for Germany will take place on 23 June 2026 in Frankfurt.
