“A standard that is by no means a given, even in the three-star sector”

“It was a truly exceptional lunch, with one highlight following another. The castle, with its blend of ancient walls and modern interiors, and the warmth of the entire team provide the perfect setting for this culinary experience to come into its own. It begins on the sunny terrace with a spectacular start featuring six snacks and four amuse-bouches. The quality of these in particular is so outstanding that it is rarely encountered. The fact that the main menu itself is rather short is therefore no problem – in theory, it would be possible to supplement it with cheese or additional courses. This would be possible in terms of appetite, but is not necessary to leave you pleasantly full. A pleasant acidity runs through the menu from start to finish, ensuring the palate always remains fresh. Added to this is an aromatic clarity that possesses many shades, revealing numerous nuances and subtleties. The fact that the dishes can be not only delicate and refined, but also expressive and powerful, is a further commendation. The fact that this menu shows no weakness from start to finish is no matter of course, even at this level of assessment – what is more, it does not allow itself any lack of flavour. This is a rarity, even at the very top end. As it is excellent in terms of both creativity and originality as well as flavour, this menu achieves a standard that is by no means a given, even in the three-star category.” (Published in December 2025)
