Architecture book ‘Paris Tokyo’ published
PERL-NENNIG. Christian Bau’s new cookbook is now available in shops. It is entitled *Paris Tokyo*. The three-Michelin-starred chef has also been using this title for his menus for many years.
Christian Bau is one of the most influential chefs in the world of haute cuisine. For 20 years, his restaurant “Victor’s Fine Dining by Christian Bau” has been awarded three Michelin stars without interruption. With “Paris Tokio”, he now presents a book that reveals the full depth of his culinary signature. It is the first major retrospective of his culinary work in over 15 years. Most recently, Christian Bau documented numerous creations in the book bau.stil.
The new book showcases 60 dishes from Bau’s cuisine, from aperitifs to desserts. At its heart are twelve signature dishes that have shaped his development over the years and continue to set the standard today. Classics such as the beef tartare croustade with smoked eel cream and caviar, ‘Japanese Sea’ or the ‘Bau.Stein’ exemplify how precise technique, a focus on ingredients and aesthetic clarity intertwine. Influenced by French haute cuisine and inspired by Japanese ingredient-driven cooking, Bau combines tradition with minimalism and precision. Supplemented by numerous basic recipes, techniques and insights into his working methods, “Paris Tokyo” is a comprehensive work for professionals and ambitious amateur chefs alike. High-quality production, outstanding photographs and the accompanying texts make this book a total work of art – and the distilled essence of one of Europe’s most consistent cuisines.
