Restaurant 1570 – CASUAL FINE DINING takes over from HILMAR

AERZEN. The Schlosshotel Münchhausen has revamped its culinary offering. ‘1570 – CASUAL FINE DINING’ has opened as the successor to the gourmet restaurant Hilmar.

The place sounds familiar, but the food tastes different there: the restaurant “1570 – CASUAL FINE DINING” at the Schlosshotel Münchhausen is the new culinary retreat, combining elegance with a sense of ease. Created for guests who want not only to experience pleasure, but also to feel it.

The Schlosshotel Münchhausen, picturesquely set amidst its historic park with its outstanding collection of ancient giant trees, and since 2025 honoured with one of the coveted MICHELIN Keys as one of the world’s best hotels, alongside many other international accolades, is breaking new ground with its gourmet offering. The previous gourmet restaurant “HILMAR” was also awarded a star by the Michelin Guide. In the new “1570 – CASUAL FINE DINING”, alongside a set menu – available as a four- or five-course meal with matching wine pairings on request – an à la carte selection is now also offered, which includes vegetarian options. But it is not just the menu that has changed; the interior of the historic rooms has also been refreshed.

“With our restaurant 1570 – CASUAL FINE DINING, we want to invite guests to experience fine dining in a relaxed, contemporary atmosphere – without compromising on quality or standards,” says hotel director Jan-Robin Winnebald. “At the same time, the concept is aimed at connoisseurs and lovers of fine dining. The signature style of the cuisine remains recognisable – what’s new is the setting for the overall experience: more open, modern and deliberately informal.”

Thor Formell Monforte is responsible for the new cuisine’s class and creativity. The 31-year-old Spaniard, who was born and raised in the Andalusian port city of Cádiz, came to Germany in 2015 and completed his training as a chef at the Schlosshotel Münchhausen. Having held various positions in different kitchens, he has already caused a sensation among connoisseurs of the gourmet scene in recent months at the previous restaurant “HILMAR”. Now a new culinary chapter is beginning in the Weserbergland, just outside the gates of Hamelin, the town of the Pied Piper.

The name of the new restaurant refers to Hilmar von Münchhausen, who laid the foundation stone for the imposing Weser Renaissance castle in Schwöbber in 1570. Since its opening in 2004, the Schlosshotel Münchhausen has combined living history with modern comfort of the highest standard.
