His philosophy is ‘feel-good cuisine’, where flavour takes centre stage. He cooks with a minimalist approach, putting the ingredients front and centre, and you can really sense that in every course. We felt incredibly at home in the restaurant. Both menus were outstanding and the service was attentive, warm and highly professional.
