Restaurant Jante is opening the Jante Studio

A new look and a new concept by Tony Hohlfeld and Mona Schrader

HANNOVER. Tony Hohlfeld and Mona Schrader’s two-Michelin-starred restaurant Jante is expanding its offering: on 8 April, Jante Studio will open as a standalone concept within the same premises at Marienstraße 116.

What began as a spontaneous idea – guests asking after their meal if they could simply come to the bar for a single course – is now becoming a space of its own. Jante Studio is the front section of the restaurant, separated by a heavy curtain and newly furnished with a raised marble table at bar height. A wine bar atmosphere, a bistro feel, space for spontaneous encounters.

The concept: Studio Bites à la carte, prepared by the two-star team led by Tony Hohlfeld. The menu ranges from classics such as bread & butter (€11), mushroom crackers (€7) and ravioli with egg yolk (€26) to fish & chips (€28) and fried chicken with Mimolette (€28, €55 with 30g of caviar) and proper pork treats: Lobster with wild garlic (€59), Rossini sandwich (€55) or ‘Pervers’ caviar with potato (€89 for 30 g). For dessert, try Tête de Moine and windfall fruit (€24) or the lava cake with white truffle ice cream (€20) – both available with a caviar topping on request. To accompany these, champagne by the glass (2006 Charles Heidsieck Brut, €29 / 0.1 l), wines from Espenschied in Rheinhessen or a Tannenzäpfle for €6. Jante’s own drinks, such as the Espresso Martini (€26) or Negroni (€24), are also on the menu. No booking required, no dress code. Just pop in.

“We’ve attracted many new guests who aren’t keen on a long menu but are open to these little treats,” says Mona Schrader, head sommelière and co-owner of Jante. “The Studio is a modern, fresh take – for anyone who doesn’t want to break the bank straight away.” There’s also a strategic idea behind it: with the Studio, Jante is lowering the barrier to entry without diluting its core offering – the classic dining experience in the back area continues unchanged. Alongside its regular operations, Jante Studio is also intended to provide a space for winemakers’ evenings, small concerts and private events.
Jante Studio is open Wednesday to Saturday from 6 pm, and on Saturdays also from 12 noon.
