“At Restaurant Haerlin, the gourmet restaurant at the Hotel Vier Jahreszeiten in Hamburg, Christoph Rüffer has been at the helm with Hanseatic calm since 2002. The Essen-born chef was awarded his third Michelin star for the first time in 2025 – at long last, one might say. Seven years have passed since my last visit – a small eternity in the fast-paced world of haute cuisine. Even back then, Rüffer’s cuisine made a strong impression: precise, well thought-out, full of sophistication. No wonder, then, that the award of the third Michelin star piqued my curiosity.
