“What Samuel Victori, the owner and chef de cuisine of this establishment – who has worked for Donckele, Troisgros and Frechon, creates here under the guise of supposedly relatively simple bistro cuisine is, in reality, high-calibre Mediterranean cuisine with a strong vegetable focus, which is extremely creative and distinctive, and stands out clearly from the prevailing mainstream within the segment of (French) one-star restaurants.” (Published in November 2026)
