“Here, the restaurant specialises in modern cuisine based on regional ingredients with a strong focus on vegetarian dishes. The dishes are well thought-out, harmonious and full of flavour. My only criticism is the balance and frequency of the bread-like, yeasty miso flavours that run through the first part of the menu. Here, I would have liked to see more variation in intensity and flavour profiles. Particularly in the cold courses, they tend to flatten out certain nuances and favour a simple umami taste. I find the hot dishes a notch stronger, as they strike a better balance between the flavour of the fresh produce and the fermented elements. The kitchen therefore delivers what one might expect at this rating level. I was thoroughly satisfied and thoroughly enjoyed this urban gourmet experience.” (Published in October 2025)
