“Sabrina Fenzl has developed her own distinctive style. Although she is a trained chef, she is clearly not influenced by any ‘great mentor’. I learn that she draws inspiration from her visits to restaurants and experiments with a wide range of techniques. The fact that the dishes are precisely balanced down to the last detail pays off. Yet the result never feels forced or strained. The blend of local produce and cosmopolitan flavours is also spot on. The dishes are very focused without being overpowering or forced. This lends them a confidence that is combined with a wealth of ideas, something not often found at this level. Overall, MIND is a restaurant where I felt very much at home. You can tell that Sabrina Fenzl has developed and designed it all herself from start to finish, and that she fits perfectly into this space with her personal style and cuisine.” (Published in March 2026)
