MUNICH. Tantris Maison Culinaire has a new head pastry chef. According to the restaurant, Emma Betti has taken over from Maxime Rebmann. He came to Munich in 2020 together with Benjamin Chmura and has now moved to Switzerland.

Like her predecessor, Emma Betti comes from France. There she worked for Yannick Alleno and at Cheval Blanc in Paris, among others. However, her previous position was in Japan, where she worked at Hotel Muni in Alain Ducasse's restaurant in Kyoto. "Her subtle creations, her high standards of excellence – and, last but not least, her warm personality – are a perfect fit for our team," says the Tantris newsletter.
