New concept at HARDY'S Restaurant on Sylt

WESTERLAND. At a time when trends are changing ever more rapidly, the Hotel Stadt Hamburg on Sylt is focusing on consistency while giving its gastronomy a new, contemporary look. With a stylish redesign of the interior and a clearly refined culinary concept, HARDY'S Restaurant will be setting new standards from 2 April 2026 and bringing a great tradition back to the island: the classic table service experience.
Flambéing, carving, filleting – in future, selected dishes will once again be prepared directly in front of guests. Whether it's fragrant crêpe Suzette, finely portioned turbot or a perfectly prepared Chateaubriand: HARDY'S celebrates those moments that turn a dinner into an experience. The concept is complemented by a new five-course menu, from which guests can flexibly choose individual courses or enjoy the menu as a whole. The vegetarian cuisine has also been expanded and is given even greater prominence on the menu with new, independent creations. "We want to create more of a stage for the product, for the craftsmanship and for personal interaction with guests," explains director Hanns-Christian Wirsich. "For us, luxury means time, attention and quality."
New ambience, familiar character
Parallel to the culinary relaunch, the restaurant is undergoing a careful, stylish facelift. High-quality materials, warm colours and new furnishings create an even more comfortable atmosphere without changing the classic country house style of the establishment. HARDY'S remains what it always was: a place for discerning connoisseurs, but without stiff gourmet etiquette. Fine dining with ease, interpreted in a relaxed, stylish and Sylt-typical way.
As part of the reorientation, the menu has also been comprehensively revised. In future, guests can look forward to a well-thought-out culinary concept for both breakfast and dinner. In the morning, the restaurant combines high-quality buffet components with freshly prepared dishes that are served individually at the table. In the evening, the focus is on classic à la carte cuisine, with an emphasis on high-quality products, precision craftsmanship and stylish presentation.
Guests can also look forward to new moments of enjoyment in the bistro . In addition to a kitchen that is open all day with light dishes for lunch and dinner, there is a stronger focus on classic coffee and cake time.
The in-house patisserie creates fine cakes, traditional cake specialities such as Friesentorte, sea buckthorn cake or classic apple cake with crumble topping, as well as seasonal desserts, which are served in the stylish ambience or on the terrace when the weather is fine. The menu is complemented by homemade waffles served with ice cream or red fruit jelly, as well as creamy rice pudding, which evokes memories of northern Germany. An elegant address for anyone who wants to treat themselves to a delicious sweet break.
A house with history
Located in the heart of Westerland, the Hotel Stadt Hamburg has stood for personal hospitality and stylish continuity for over 155 years. The privately run hotel combines historical substance with modern comfort and a comprehensive range of gastronomy, serviced apartments and spa facilities. 45 individually designed rooms, 25 suites and 15 high-quality serviced apartments offer space for different travel needs and are aimed at both long-standing regular guests and younger Sylt explorers and families.
With the QIARA SPA, the hotel also has its own wellness area with a pool, sauna and steam bath facilities, as well as individual treatments with high-quality care products. Since summer 2024, the hotel has been part of the Lindner Hotel Group's L-Collection and continues to be managed independently.
