Serious allegations against Noma

COPENHAGEN. Copenhagen's top restaurant Noma, one of the most influential restaurants in the world for years, has once again been the subject of massive criticism in recent days. Several former employees have made serious allegations against the business and its co-founder and head chef René Redzepi on social media. The current debate was triggered by a public campaign under the hashtag #NomaAbuse. The allegations are based on anonymous accounts of experiences, the veracity of which cannot be easily verified from the outside without further details. As things stand, there are no known official investigations or court findings. The presumption of innocence applies. Noma has not yet responded.
The most recent allegations came from Jason Ignacio White, who managed the restaurant's fermentation laboratory between 2017 and 2022. White published his own accounts on Instagram, as well as anonymous statements from other former team members, and referred to the website noma‑abuse.com, which states that 38 anonymous testimonials have currently been collected.
The range of allegations is wide. According to the texts published on the website, former employees speak of a "culture of fear," massive psychological pressure and humiliation in their everyday work. In addition, there are reports of alleged physical assaults, inadequate responses to workplace accidents, medical neglect and sexual assaults. Several anonymous reports are directed explicitly against René Redzepi personally.
A recurring theme in the accounts is the accusation that complaints were ignored internally and that critics allegedly had to reckon with professional consequences. An alleged "blacklist" for unpopular interns is also mentioned. One person was "punched in the face while on duty," according to the allegations. Other statements describe physical assaults by superiors and a climate in which such incidents were not punished. The reports also sharply criticise the handling of workplace accidents and injuries. According to a statement by a former employee quoted on noma-abuse.com, a young intern did not initially receive adequate help after suffering a severe burn and only received medical attention after a colleague insisted.
In addition, individual anonymous reports on the website contain descriptions of sexual assault and inappropriate behaviour by superiors. Those affected accuse management of ignoring or downplaying complaints internally. Several statements also claim that anyone who voices criticism must expect professional disadvantages, such as informal warnings within the industry. There has been no official statement from Noma restaurant on the latest allegations. Likewise, there are currently no confirmed legal actions or investigations by the Danish authorities.
Noma has long been criticised for its strict hierarchies and working conditions. Particularly well-known is its former practice of unpaid internships, which sparked an international debate about exploitation in top-class gastronomy. Noma only introduced payment for so-called stagiaires in 2022. Noma had also announced that it would cease regular operations. Instead, it plans to focus more on development work. Noma also plans to open temporarily in Copenhagen and other locations. As reported, Nomal will soon be making a guest appearance in California. René Redzepi himself had already publicly admitted in 2015 that he had behaved inappropriately towards employees and spoke of bullying and aggressive behaviour.
The case is currently the subject of intense discussion on social media and in the trade press about the structures of haute cuisine as a whole. Many voices see the Noma case as symptomatic of a system that confuses extreme dedication with personal self-sacrifice. At the same time, there are also former employees who attest to positive experiences at the restaurant and criticise the blanket condemnation.
