New team at Le Clarence in Paris

Two-star restaurant has new head chef and new head sommelier

PARIS. The two-star restaurant Le Clarence is starting the new year with a new management team. The former Executive Chef Christophe Pelé will be succeeded by his Chef Andrea Capasso. The new head sommelier is Cyril Bossard.

Andrea Capasso comes from Italy. He completed his training at the ALMA Academy founded by Gualtiero Marchesi, where he learnt Italian and French classical cuisine. He then worked at Lido 84 in Italy. He has been working at Le Clarence for six years. Now he wants to enrich French haute cuisine with his creativity, the finesse of his textures and his fine sense of the balance between land and sea.

New to the team is head sommelier Cyril Bossard. He comes from L'Apogée Courchevel and was most recently head sommelier at Eden Rock on the French Caribbean island of Saint-Barthélemy.
