What emerges from Karl-Louis Kömmler's kitchen is truly remarkable. Putting the very best ingredients on the menu is one thing. But preparing them with such confidence and precision as is done here is quite another. Stylistically, it is difficult to categorise. What is remarkable is how focused the dishes are. They usually consist of relatively few components, without lacking depth and complexity. But they do without anything superfluous or decorative. Considering how many chefs often present a display of streaks, dots, gels and variations of a single ingredient on a plate, Kömmler takes the opposite approach.
