Wild private dining experience in Böblingen
Baden-Württemberg
BÖBLINGEN: In addition to the Zum Reussenstein restaurant that he runs, Timo Böckle has launched a private dining offer that is entirely dedicated to the enjoyment of game meat: game.
It serves game menus from sustainable hunting and the 500-hectare forest reserve. The kitchen block is located in the centre of the dining room, allowing guests to experience the preparation of the dishes. WILD is the only restaurant in Germany that does not use any meat from domesticated animals and only uses regional products from Baden-Württemberg for both food and drink. The seasonally changing game menus are supplemented with vegetables, fruit and wild and forest herbs from our home region.
An evening at WILD is reminiscent of a culinary walk in the forest: from the selection of the animals in the wild, to the hunting and processing in the restaurant's own game room, to the lovingly prepared dish on the plate: the aim is to show centuries-old craftsmanship - in harmony with nature. Timo Böckle is a master chef and comes from a traditional Swabian family of butchers who have been passing on their masterly craft for four generations. As SWR's longest-serving TV chef, he has been inspiring a wide audience with his expertise for over 20 years - especially when it comes to game dishes. He is also a hunting tenant and district master hunter and is considered the expert on native wild animals among Germany's top chefs. At the same time, guests have the opportunity to watch a live stream into the hunting ground via a monitor to see which wild animals are currently on the move. The menu changes with the four seasons. In the colder months, it is more traditional - in spring and summer, there are exciting steak cuts from various wild animals with light sauces, forest herbs and berries, among other things.
