(27 November 2025 ) BANGKOK - The Michelin Guide Thailand 2026 has been published. A total of 468 restaurants are rated. Among them are two three-star restaurants (one upgraded from two-star), eight two-star restaurants (two upgraded from one-star), 33 one-star restaurants (three new and four upgraded restaurants from the recommendations), 137 Bib Gourmand restaurants (13 new) and 288 restaurant recommendations (50 new).
Gwendal Poullennec, International Director of the Michelin Guide, said: "Thailand remains a vibrant destination for unique and diverse culinary experiences. This year's Michelin Guide is full of exciting surprises and new developments. The latest edition showcases a wider range of cuisines and reflects Thailand's dynamic and ever-evolving gastronomic scene, characterised by remarkable energy and creativity. With the growing number of stars, Thailand is shining ever brighter on the global gastronomic map." According to Mr Poullennec, Michelin Guide inspectors have observed a growing presence of international chefs across Thailand. They bring fresh energy and global perspectives while integrating local ingredients and traditions into their creations. For their part, Thai chefs are developing local cuisine and infusing it with more expressive regional flavours. A closer collaboration between chefs and producers has also emerged. Many restaurants source seasonal ingredients directly from small farmers and local communities. Food and drink pairing continues to play a central role in the culinary experience. Non-alcoholic alternatives made from herbs and flowers are becoming increasingly popular alongside fine wines. The guide's inspectors also highlighted the rise of casual restaurants with a focus on plant-based dishes and modern Thai concepts that respect traditional roots. Responsible cooking, careful sourcing and "borderless" or "creative" cuisine - where chefs combine techniques and ingredients from different culinary traditions - are increasingly characterising the Thai dining scene.
Three stars
In addition to Sorn, the first restaurant in Thailand to be awarded three stars, Sühring, founded by twin brothers and chefs Thomas and Mathias Sühring, has now also received this honour. The restaurant serves a modern German tasting menu inspired by family recipes, childhood memories and travelling. At Sühring, seasonal ingredients are masterfully prepared using traditional German methods such as fermenting, pickling and curing. Each dish is carefully created and artfully presented, making the culinary experience as fascinating as it is flavourful.
Sühring was awarded one star in the first edition of the Michelin Guide Thailand in 2018, two stars the following year and has defended this award for seven consecutive years. The award of the coveted three stars in the 2026 edition underlines the restaurant's outstanding culinary excellence, consistency and commitment to the highest gastronomic standards.
Two stars
- Anne-Sophie Pic at Le Normandie and INDDEE move up from one to two stars. Two new restaurants have been awarded two Michelin stars in the Michelin Guide Thailand 2026:
Anne-Sophie Pic at Le Normandie, a modern French restaurant where chef Anne-Sophie Pic teams up with her Japanese chef Tamaki Kobayashi to present an exquisite menu that highlights their signature creations, including the famous lobster dish and the carefully crafted "Voyage" menu. - INDDEE, a modern Indian restaurant that takes its guests on a culinary journey through India with a menu of around ten courses. The menu captivates with visual artistry, unforgettable flavours and meaningful stories - from carabinero as a symbol of Goa, to pickled vegetables reminiscent of the harsh Himalayan winter, to patra with Hokkaido scallops, reflecting the chef's Japanese cooking experience.
One star
Of the seven new one-star restaurants, three were included in the guide for the first time, while the other four were promoted from the recommendations.
The three new one-star restaurants are:
- Bo.lan, a Thai restaurant with a menu based on traditional recipes and sustainability. It skilfully uses rare regional produce from small farmers to explore Thailand's culinary heritage through precise techniques and elegantly simple presentations that showcase the depth and balance of flavours.
- Cannubi by Umberto Bombana, an Italian restaurant with a concise lunch menu and a full tasting menu in the evening. The confident, balanced dishes combine classic roots with modern techniques.
- etcha, a restaurant where the chef creates a limitless culinary experience. He combines European cooking techniques with Thai ingredients in his 11-course "360°" and 8-course "180°" menus. The menus highlight seasonal, regional produce and are prepared with finesse and deep respect for local flavours.
The four restaurants that have been awarded a Michelin star by the Recommendations list are:
- Gaggan, a restaurant where over 20 innovative courses are presented in five theatrical acts. Each act is accompanied by dynamic lighting and a pulsating soundtrack. Bold flavours and interactive energy merge here, embodying the essence of the celebrity chef.
- Juksunchae, a restaurant with a balanced and intriguing omakase menu that reinterprets traditional Korean flavours in delicate, sophisticated and visually stunning dishes such as octopus tubu jjigae, truffle mandu and crab bibimbap. - Nusara, under the direction of chef Thitid "Ton" Tassanakajohn - the talent behind Le Du, which was awarded a Michelin star in 2019 - offers one of Bangkok's most intimate Thai dining experiences. With elegant olive green interiors, golden accents and rooftop views of Wat Pho, a culinary journey awaits with appetising bites and standout dishes such as roasted Thai wagyu beef with holy basil and four regional relishes.
- The sushi restaurant Sushi Saito serves Edomae-style sushi, prepared according to Edo period techniques. Fresh seafood is flown in from Japan several times a week and the Akita rice is cooked with the utmost care for temperature and moisture and served in small portions to ensure the highest quality.
Special awards
With its special awards, the Michelin Guide recognises talented professionals in Michelin-recommended restaurants who take the gastronomic experience to a new level. They show just how diverse and exciting the catering industry is.
- The Michelin Guide Young Chef Award: The MICHELIN Guide Young Chef Award recognises a young chef who has demonstrated a unique personality and/or a distinctive culinary identity over the past twelve months. This year, the Young Chef Award goes to Mr Suwijak Kunghae, owner and head chef of Royd Restaurant. Born in Phuket, Mr Kunghae grew up in a family of chefs who awakened his deep passion for Southern Thai cuisine. He honed his skills in a French restaurant where he gained valuable experience in fine dining. Upon his return to his hometown, he founded Royd to celebrate the flavours of the Southern Sea. Working with local communities, he combines traditional recipes with modern techniques and wants to show the world how people eat in the south of the USA.
- Guide Michelin Opening of the Year Award: The Guide Michelin Opening of the Year Award recognises individuals and teams for the successful opening of a restaurant within the last twelve months. It recognises restaurants with a creative tasting concept and a culinary approach that has significantly influenced the local gastronomy scene. This year's award goes to Wilfrid Hocquet, owner and head chef of the Margo restaurant. The French restaurant Margo, which opened in June 2025, was first included in the Michelin Guide Thailand in 2026 and is listed there as a recommendation. The menu offers refined French classics complemented by a vibrant ambience and smooth service from a knowledgeable team. Although new, Margo already has an established feel - informal yet refined, well thought out and promising.
- The Guide Michelin Service Award: The Guide Michelin Service Award recognises talented and skilled professionals who significantly enhance the customer experience. This year's Guide Michelin Service Award, presented by the Tourism Authority of Thailand, goes to Mr Arsen Brahaj, restaurant manager of Aulis, a one-star restaurant in Phang-Nga. Born in Albania, Mr Brahaj speaks four languages and brings with him experience from Simon Rogan's starred restaurant in Malta, where he worked as a supervisor. At Aulis, he is in charge of service and creates beverage pairings that emphasise local ingredients. Mr Brahaj ensures that everything runs smoothly - he welcomes guests with warm charm, explains the dishes with passion, supports the kitchen team and offers a first-class culinary experience that leaves a lasting impression.
- The Guide Michelin Mentor Chef Award: The Guide Michelin Mentor Chef Award recognises chefs whose tireless commitment to the advancement of young culinary talent has made a lasting impact on the industry. A milestone for Thailand: The country's very first Mentor Chef Award goes to David Thompson, owner and chef of Aksorn (one star) and Chop Chop Cook Shop. Mr Thompson's passion for Thai cuisine began in the 1980s when he first visited Thailand and fell in love with its rich food culture. In 2001, he opened Nahm in London - the first Thai restaurant to be awarded a star - and established Thai cuisine in the international fine dining scene. In 2010, he brought Nahm to Bangkok, shaping the identity of Thai fine dining for chefs and diners alike. Aside from his own culinary successes, Mr Thompson's greatest legacy lies in his mentorship. Many of Thailand's leading chefs have learnt in his kitchens, continuing his respect for tradition and pursuit of excellence. Although he was not born in Thailand, he has dedicated his professional life to preserving, teaching and developing Thai cuisine. His influence continues to be felt in the Thai culinary scene, making his impact both profound and lasting.
Green star
Restaurant GOAT is the fifth Thai restaurant to be recognised for its sustainable practices. The Green Star recognises restaurants that have inspired and impressed Michelin Guide inspectors with their forward-thinking vision for gastronomy. By connecting innovative businesses that are committed to the advancement of gastronomy, the Green Star promotes dialogue and collaboration and encourages restaurants to develop together.
The GOAT is committed to conscious cooking and emphasises Thailand's rich natural diversity. Ingredients are sourced directly from local farmers, fishermen and small producers, and herbs and edible flowers are grown in the rooftop garden. Every food item is used with care: Bones are boiled into stock, trimmings are fermented or composted, and oil is carefully recycled. Their attention to detail extends to the décor, where reclaimed wood and recycled crockery reflect the same mindful philosophy.
The newly awarded restaurant joins the ranks of four already award-winning establishments that continue to impress reviewers: PRU, Haoma, Jampa and Baan Tepa. Together they form a community dedicated to presenting a new vision of gastronomy.
