Petillio opens in Sinzheim near Baden-Baden

SINZHEIM. Armin and Sabine Röttele opened a new restaurant in mid-December: Petillio is located in Sinzheim near Baden-Baden. Initially, small events for up to eight people will be held, with regular restaurant operations scheduled to begin in February 2026.

Diversity and the highest quality combined with the best craftsmanship and a beautiful ambience are the fundamental elements of his cuisine. This is also how it will be implemented in the new restaurant: he does not want to revolutionise anything, reinvent anything or even chase every trend. However, he wants to put his own stamp on the menu, designing it harmoniously, adding flavour and sophistication, and completing it all with down-to-earth culinary artistry. There will be a changing menu adapted to the season. And, upon advance order, one or two of his classics will also be available. In addition, all of his PETILLIO products will of course be available for tasting. PETILLIO impresses with both its modernity and its cosy atmosphere. A long table frees guests from the usual conventions, in keeping with the motto: Enjoying good food and wine together with other connoisseurs – relaxed, informal conversations with people who love good food and good wine! There are also four individual tables available.

With his unique combination of Mediterranean, light cuisine combined with Baden components, Armin Röttele has shaped the German and Swiss gastronomic scene. Born in Waldkirch, Baden-Württemberg, Armin Röttele turned his passion into his profession at an early age. After working at Haus Colombi (Freiburg), Traube Tonbach (Baiersbronn), the Swiss restaurant Fischerzunft (Schaffhausen) and Jöhri's Talvo in Champfer (near St. Moritz), among others, his path as a chef led him to the renowned Hotel Giardino Ascona, where he further developed his Mediterranean style and gained international recognition. He returned to Germany in 2004 and, together with his wife Sabine, ran "Röttele's Restaurant & Residenz im Schloss Neuweier" near Baden-Baden until 2020 – an establishment known far beyond the region for its excellent cuisine and warm hospitality. The couple's motto is: "Don't worry, live!" – a motto that brings pleasure and joie de vivre into harmony.

Armin Röttele has received numerous awards: Hotel Giardino Ascona from 1997 to 2000 Award for the best hotel cuisine in Switzerland and award for the best holiday hotel in Switzerland. His cookbook "La cucina della passione" was awarded the "Gourmand World Cookbook Award" and the "Best Italian Cuisine Book" in Madrid. Back in Germany, Röttele was awarded a star by the Michelin Guide from 2006 to 2020 for his restaurant in Schloss Neuweier. His cuisine captivates with its clear lines, high-quality products and elegant, modern processing of Mediterranean ingredients and Baden tradition. Current projects & outlook After leaving "Röttele's Restaurant & Residenz im Schloss Neuweier" at the end of June 2020, the Rötteles turned their attention to new challenges. They now offer fine dining experiences in a private setting and are involved in various gourmet events, such as the Baden-Baden FALSTAFF Wine & Gourmet Festival in June 2025, where they will be serving a menu entitled "Il profumo del mare e dell'orto – The scent of the sea & the vegetable garden". The Rötteles are also active in business: with their PETILLIO brand, they market high-quality butter and pesto products that reflect their standards of taste and quality.
