"It is rare that a menu shows no weaknesses from the first greeting to the last sweet. This is the case at the Cheval Blanc. Peter Knogl's cuisine is undoubtedly committed to the classics, probably more so than many others. But he does so with a perfection that seems anything but out of date. The dishes radiate a naturalness that only a great chef can produce. Only someone who knows exactly where they stand can afford to consistently leave out anything superfluous. Everything has probably already been said about Peter Knogl's sauces. It is not only here, but above all here, that true mastery can be tasted. All of this is flanked in the elegant dining room by a well-rehearsed and perfect service team led by maître Giuseppe Giliberti and sommelier Christoph Kokemoor, who attend to each table individually and find exactly the right tone. As welcome and relaxed as we felt here from the moment we arrived, we were given a warm and formal farewell. What characterises the "Cheval Blanc" for me after this visit? Excellence.
