Eight new restaurants with Bib Gourmand

Michelin Guide rates 140 restaurants in Texas

(2 November 2025) - The Michelin Guide has published its latest restaurant ratings for the US state of Texas in Houston. The 2025 edition includes three new one-star restaurants and two new additions to the "Green Star" category. Isidore in San Antonio and Mamani in Dallas were each awarded their first star at the ceremony. In addition, Nicosi restaurant in San Antonio was also honoured with a star, bringing the total number of starred restaurants in Texas to 18. The full 2025 selection includes eight new Bib Gourmand restaurants and 16 recommended restaurants, bringing the total number of awarded restaurants to 140 across 33 different cuisines.

"This year's selection for Texas highlights the many talents in the various regions that continue to excel in culinary innovation and tangible passion," said Gwendal Poullennec, International Director of the Michelin Guide. "We are delighted to welcome three new restaurants to the family of Michelin-starred restaurants, bringing them to the attention of travellers from near and far. Congratulations to all the restaurants and chefs who have been recognised in this diverse selection."

One star

  • Mamani, Dallas (French Modern Cuisine): With this sleek and stylish restaurant, Chef Christophe De Lellis brings impressive expertise to Dallas after spending nearly a decade running the kitchen at Restaurant Joël Robuchon in Las Vegas. The bistronomy-style menu of refined yet simple dishes is offered à la carte, but the prices are not exactly cheap. However, guests who want to treat themselves to something special will get their money's worth: high-quality ingredients, flawless preparation and first-class sauces are everywhere. Dishes to share such as sole with brown butter or veal cordon bleu (served with Robuchon's signature buttery mashed potatoes, of course) are impressive, but be sure to leave room for a perfect Paris-Brest with praline cream. The extensive wine list invites you to browse.
  • Isidore, San Antonio (American cuisine): Located in San Antonio's historic Pearl District, Isidore is a stylish mid-century-modern style restaurant with an open kitchen and fireplace. Named after the patron saint of farmers and labourers, the focus is clearly on Texan ingredients and local traditions, even incorporating elements of indigenous cuisine into the bread service. The menu is extensive and offers dishes to share as well as a special steak selection. Choosing the right snack is difficult, but the popcorn chicken, crispy fried with popcorn aioli and velouté, is a good choice. The Cherokee tomato in house-made kombucha lets local ingredients shine, and the dry-aged Berkshire pork chop with 23-spice sauce is another highlight. Texan wines are also proudly offered on the wine list and as optional wine pairings.
  • Nicosi, San Antonio (Creative Cuisine): There's no need to save room for dessert at Nicōsi, as this exceptional tasting menu is dedicated solely to sweet finishes. Set in a dark, atmospheric room with velvet curtains in the Pullman Market, this theatrical experience is a real surprise, as there is a strict ban on photography and mobile phones for all guests at the L-shaped counter. The multi-course menu usually follows four themes - sour, umami, bitter and sweet - and the team rarely repeats dishes from one season to the next. The creations are unusual and imaginative. Think mille-feuille of fat-tailed tomme cheese crackers with spring onion mousse, icing sugar and caviar with gold leaf, or beef ribs topped with candy floss prepared right in the room. The chefs are available to guests throughout the meal and are happy to explain their preparation methods and their inspirations.

Green star

Two new restaurants stand out for their inspiring visions, which are characterised by the green star. By fostering a community of innovative businesses that drive progress in gastronomy, the Green Star promotes dialogue and collaboration, encouraging restaurants to inspire each other and develop together.

  • At Nixta Taqueria in Austin, the team sources its ingredients almost exclusively from the region, with the exception of the ancient corn variety, which comes from a fifth-generation farming family in San Martin Tilcajete, Oaxaca, and is used to make its own masa and tortillas.
  • At Isidore in San Antonio, meat and seafood come from local farms and the Gulf of Mexico, with a particular focus on the utilisation of bycatch. Vegetables and fruit are sourced exclusively from Texas farms, with a preference for small, independent producers.

These newly awarded restaurants join the two already recognised establishments that continue to impress inspectors: Dai Due andEmmer & Rye, both in Austin. Together they form a community dedicated to a different vision of gastronomy.

Bib Gourmand
