"To summarise, I can say that Douce Steiner exceeded my expectations. Where I had expected simply unagitated French classicism, it turned out that French classicism was only a foundation here. Her style felt surprisingly modern, as evidenced by her courage in consistently focusing on green flavours in the courses of the spring menu. Or to turn up the intensity of the grapefruit and the spiciness in the first signature dish. You are unlikely to get lost in the Hirschen in Sulzburg by chance. But if you do, you won't regret it."
