The eight-part documentary series "Knife Edge: Chasing Michelin Stars" has been launched on the streaming provider Apple TV+. Executive producer Gordon Ramsay and Studio Ramsay Global offer rare access to the sophisticated world of Michelin-starred cuisine, hosted by food expert and Topjaw co-founder Jesse Burgess.

"Knife Edge: Chasing Michelin Stars" travels to some of the world's most fascinating culinary destinations. In eight episodes, the series visits restaurants in New York (Coqodaq, The Musket Room, Nōksu), Chicago (Cariño, Esmé, Feld), the Nordic countries (Aure, Jordnær, Knystaforsen), the UK (Caractère, House, Wilsons), Mexico (Em, Máximo), Italy (Agriturismo Ferdy, Kresios) and California (Harbor House, Pasjoli, Pasta|Bar). At each stop, chefs open their doors and kitchens in pursuit of their first, second or even third Michelin star.

With unprecedented access to Michelin - including rare, official interviews with anonymous inspectors - the series offers a chef's-eye view of one of the culinary world's most difficult honours and tells the human stories behind the pursuit of perfection.

The Swedish restaurant Knystaforsen, for example, is located in an old sawmill, in the middle of the forest and right by the river. The menu reflects this environment: fish from the surrounding waters, meat from local elk and deer, berries and mushrooms from the forest and vegetables from nearby farms. And anyone who is a guest here quickly realises that hospitality is part of the philosophy. In addition to its Michelin star for outstanding cuisine, Knystaforsen also holds a Green Michelin star in recognition of its pioneering role in sustainable gastronomy. However, sustainability here means more than regional ingredients: At Knystaforsen, food is cooked outdoors and over an open fire. A deliberate alternative to the pace of modernity, where time and community are once again central to the dining experience.
