Kluth: Fine Dining meets Market Garden

Hannes Radeck and Kevin Rademacker have opened a restaurant

COLOGNE: Hannes Radeck and Kevin Rademacker opened Restaurant Kluth in Cologne-Ehrenfeld in mid-August. Radeck was sous chef and head pâtissier at the two-star restaurant Ox&Klee in Cologne, while Kevin Rademacker was also sous chef there and most recently head chef at Frohnatur Weinstube.

Concept: Fine dining meets market garden

In the KLUTH restaurant, fine dining meets a relaxed atmosphere. The concept is based on the Market Garden principle: "We attach great importance to sustainable, seasonal products from farmers and producers that we know personally. Our ingredients and wines have short delivery routes, at most one country border away," explain Hannes Radeck and Kevin Rademacker. To ensure maximum transparency, each table has a list of all the producers and their products.

The two want to produce as much as possible themselves - from koji to pickled vegetables. "This approach is essential for us because it allows us to project our very own, distinctive flavour. We don't buy anything that we haven't produced ourselves with the utmost care and passion. In this way, we guarantee that every dish on our plate bears our signature," says the self-description. Sustainability should be reflected in the entire menu. Produce is processed from root to shell and food waste is minimised.

The ambience of the restaurant is modern and Scandinavian in style. The music comes from record players to create a warm, unobtrusive and at the same time special atmosphere. The carefully selected records are intended as an acoustic counterpart to the authentic products on the plate.
