New management duo at FREDERICK'S in Berlin
BERLIN: FREDERICK'S in the centre at Potsdamer Platz is starting the coming season with a new management team: restaurant manager Josip Dzajic (49) and head chef Nicolas Gémin (41) are now in charge of the restaurant's operations - and bring a wealth of experience, international stations and a clear signature to the table.
To celebrate his debut at FREDERICK'S, chef Nicolas Gémin is presenting a three-course "get-to-know" menu of his European brasserie cuisine from 17 September to 4 November 2025 at a price of 45 euros per person. He is inviting guests to discover his culinary signature for the first time. Restaurant manager Josip Dzajic accompanies the menu with a glass of Crémant brut from the Abril vineyard (Kaiserstuhl), which he serves to guests as a special greeting on the house. The 3-course menu consists of Jerusalem artichokes and confit mini king oyster mushrooms with fresh truffle, followed by slow-cooked Iberico pork belly with crispy polenta, a variation of cauliflower and mustard jus as well as a quince tartelette with red wine, "citrus cheesecake" and sea buckthorn sorbet for dessert. Josip Dzajic - host with a wealth of international experience
Born in Croatia and at home in Germany for over 30 years, Dzajic initially trained as a hotel manager at the Europe Hotel Stuttgart after leaving school. This was followed by a degree in Catholic theology in Tübingen and a year abroad at the University of California in Berkeley. His professional career has taken him through upscale gastronomy in Germany, Switzerland and the USA - including as Managing Director of the Zurich D-Vino wine bars, as a branch manager in Swiss system catering and in management positions at the Parkhotel Schloss Hünigen near Bern and in Reutlingen. He has been shaping the Berlin gastronomy scene since 2016: six years as restaurant manager at Reinhard's on Kurfürstendamm, one year at the traditional Einstein Unter den Linden and two years at the Scirocco Brasserie on Ku'damm. Dzajic is therefore at home on stages that combine Berlin flair with an international audience - ideal conditions for his role as restaurant manager and host at FREDERICK'S. The qualified wine sommelier (WSET Level 3) is also recognised as an expert in wine and spirits.
Nicolas Gémin - chef with a cosmopolitan signature
Culinary management at FREDERICK'S is the responsibility of 41-year-old Frenchman Nicolas Gémin. With over two decades of experience in top European kitchens, he brings a wealth of techniques, ideas and international influences with him: Trained at the renowned École hôtelière de Biarritz, Gémin gained formative stints at Michelin-starred establishments such as Chapter One in Dublin, De Posthoorn in the Netherlands and the Pauly Saal in Berlin. This career was complemented by internships at L'Ortolan (1* Michelin), Le Manoir aux Quat'Saisons (2* Michelin) and other addresses in France, the United Kingdom and Morocco. Based in Berlin for over ten years, Gémin has made his mark on the capital's gastronomy, particularly as Executive Chef and Partner at SPINDLER. For almost a decade, he led a high-performance, creative kitchen, developed menus and oversaw the strategic development of the restaurant. Under his leadership, SPINDLER was recognised as one of the "Top 50 Brunches in Germany" by Opentable in 2024 and 2025 and was one of the most frequently booked restaurants in Berlin. With a calm management style, a clear signature and a cuisine that combines classic techniques with seasonal, product-orientated creativity, Nicolas Gémin is opening a new chapter at FREDERICK'S - between respect for tradition and a desire for innovation.
