New head chef at Der Weinlobbyist
BERLIN When sommelier Serhat Aktas took over the restaurant at the beginning of 2020, it opened in the middle of the first lockdown. Today, this is just a small side note, as the wine lobbyist has long since established himself and is one of the city's established wine addresses. "The new kitchen was planned right from the start, but the coronavirus pandemic threw a spanner in the works. The right time only came now," says Aktas. The dining room has also been given a fresh coat of paint.
New head chef with his own signature style
Tilo Roth, formerly head chef at The Grand, is an experienced professional taking over the culinary reins. The proven meat specialist stands for a cuisine that focuses on clear flavours and fine ingredients. In addition to popular winefood classics such as cheese, ham and tarte flambée, the menu will in future feature ten dishes, four of which will be served as recommended menus - changing regularly and always in line with the season. "I'm looking forward to my new challenge at Weinlobbyist," says Tilo Roth, adding: "The cooking here is sophisticated, but at the same time down-to-earth and accessible to everyone."
Guests can look forward to exciting combinations:
For example, savoury black pudding with scallops, accompanied by fermented beetroot as a vegetarian counterpoint and a fruity Granny Smith gel that provides freshness and lightness. The main course is braised ox cheeks with celeriac puree and glazed carrots, finished off with a deep, umami-rich Barolo sauce. Those who love classic dishes will love the tender fillet of beef with port wine jus - a timeless delight.
There have also been organisational changes: The wine lobbyist now opens on Sundays and Mondays, two days on which many Berlin restaurants are closed. Instead, the restaurant remains closed on Tuesdays and Wednesdays.
